As all good chefs know, cooking is both a science and an art. Our gummy recipe combines scientific precision, culinary craft, and high quality ingredients to create consistent dosing, ideal texture, and vibrant flavor in every bite.
pREPARING
We always begin our process with a thorough cleaning of the kitchen, ensuring that all appliances and cookware are spotless and ready for use. In alignment with the French culinary principle of mise en place — meaning "everything in its place" — we create an orderly workflow by pre-weighing our ingredients.
The kitchen can quickly become a bustling environment. Because we often have several large pots of our gummy recipe cooking simultaneously, we rely on a well-organized workspace to improve our time management and prevent errors.
COOKING
Our recipe begins with a well-balanced sugar mixture, a unique blend of tapioca syrup and sugar. Functioning as more than just sweeteners, these ingredients have a significant impact on achieving ideal texture.
We bloom our gelatin with purified water, combine it with the sugar and syrup blend, and add pectin. Pectin plays a critical role in temperature stability – the cured gummies will be more resilient to melting (in your pocket or a warm car, for example). To complete the recipe, we add our in-house cannabis extract, natural flavors, and vibrant natural colors! We carefully monitor temperature throughout this blending process to maintain optimal consistency for depositing.
BRIX TESTING
Brix testing is a critical part of our quality control process in gummy production. By measuring the concentration of dissolved solids — primarily sugars — it allows us to precisely monitor and adjust the curing process for every batch. This ensures each gummy maintains the ideal texture. When the Brix level is just right, the result is a consistent, balanced chew: not too firm, not too soft, and never sticky or dry.
DEPOSITING
Once our mixture reaches the target Brix level, we transfer it to our depositor, which accurately dispenses it into our custom-designed molds.
Precision dosing is key to a positive edibles experience. The depositor controls each gummy’s fill and, therefore, cannabinoid content. Our vigilant team carefully monitors the depositor’s operation and makes any necessary adjustments in real time. By tightly managing this process, we’re able to deliver consistent dosing across every batch
CURING & COATING
After depositing, we move the gummies into a controlled curing environment to let them set. We actively manage humidity and temperature to create the ideal conditions for solidifying the gummies. This careful control locks in the desired texture, prevents stickiness, and ensures long-term stability. It’s a hands-on process that plays a big role in delivering a consistently high-quality edible.
Finally, we demold and coat the gummies with a custom blend of sugar and citric acid. This final step adds texture, enhances flavor, and reduces clumping in the bag.
PACKAGING
Our gummies are packaged in childproof mylar bags, which significantly extends freshness by minimizing oxygen and moisture exposure, blocking light, and offering some protection against temperature fluctuations.
For optimal quality, we recommend storing this product in a cool, dry place, away from heat and direct sunlight. Refrigeration is not necessary.
